Secret Recipe For Guinness Punch | Not Quite Gordon Ramsay
When I was living in Barbados a drink that I discovered and became addicted to was Guinness Punch. It is a drink that slides down amazingly well, in fact it is delicious… a wee touch of paradise in a glass.
Until last night It been well over 16 months since I last enjoyed a glass or two of Guinness Punch. For me there was nothing quite like sitting on the balcony or front porch watching a beautiful Bajan sun set with a few glasses of nicely chilled Guinness Punch, followed by a couple of bottles of ice cold Banks beer. A perfect way to end another tough day in paradise..!
It took me a lot of covert operations, hidden cameras and sneaky side ways glances to discover this secret recipe for Guinness Punch that I’m going to share with you today. My Bajan family members were not too keen on given away too much information and they say the Scots are tight! My version doesn’t quite taste as perfect as what my former wife or her cousins would make but never the less it is dam good.
As most people that have lived in the Caribbean are quite aware, that the locals very rarely if ever use a set of scales, it just doesn’t happen. And believe me some of the best food I have ever tasted in my life was cooked by people who didn’t sit with a recipe book in front of them and painstakingly weigh things. They use a very natural and instinctive way of cooking that works amazingly well.
Recipe for Guinness Punch:

330 ml Guinness Foreign Extra Stout (whole bottle)

50 ml Magnum Tonic Wine (quarter of the bottle)

½ a tin of sweetened condensed milk

smidgen of cinnamon
-
smidgen of nutmeg
-
smidgen of of unsweetened cocoa powder
-
As much ice as you want

Serves one
Pour the well-chilled Guinness into a blender. Add the sweetened condensed milk, magnum, spices, and cocoa and blend for around a minute. Pour the Guinness Punch into a large glass and add some ice. It needs to be a large glass because it tastes so good that it will save you from having to get up from your comfy chair again to fill up your glass.
The setting last night here in Kilburn wasn’t quite the same as the last time I drank Guinness Punch in Barbados. This time there was no balcony with a view of the sea, there was no sun set and the air wasn’t warm, but at least the punch tasted fantastic.
Eat your heart out Gordon Ramsay…this stuff is the business and even you the great Scottish God of the kitchen couldn’t better this..!
